My FavoritesQ uinoa Primavera
1 c uncooked rinsed white quinoa 2c chicken broth 4oz philly cream cheese fresh basil leaves, shredded finely grated mozz. cheese 4 cups Fresh or Frozen broccoli and cauliflower 1/2 fresh onion 4 tbs butter salt and pepper, garlic clove, minced Bring the rinsed quinoa and chicken broth to a rolling boil and cover, simmering, until quinoa is cooked fully. Remove from heat and add cream cheese, stir until melted. Remove from pan into serving dish and lightly sprinkle on the mozz. cheese. Varnish with Basil leaves While Quinoa is cooking, melt butter in a pan and saute veggies (covered, on low heat) until soft and butter is absorbed. (usually around 10 minutes or more) Sprinkle with seasonings and serve with quinoa. Serve warm, and enjoy! |
Taco Bowl (Feeds 8, or yourself 8 times!)
Ground Beef
Taco Seasoning Mix 2 cups water 2 cups minute rice, uncooked 2 cups shredded lettice 1 large tomato, chopped (sub with one can diced tomatos) Salsa Corn Can of beans Optional Pico De Gallo Sour Cream (served on top) Spray skillet with cooking spray. Add meat and brown over medium high heat, drain off excess fat. Add seasoning mix and water, stir and bring to boil. Stir in rice, sprince with cheese, cover. Reduce to low, simmer 5 minutes, top with lettice and tomato and other ingredients before serving. Note from myself: The fun with this recipe is you can add or take away whatever you want! Don't like beans, but really like salsa? Skip one and do extra of the other! I always add cheese and sour cream after it's done cooking, and sometimes even more salsa. Enjoy! |
